She was a very picky eater growing up, earning the nickname Picky Nikki, and forced herself to like things by trying new foods over and over and over. She had an online cooking show on YouTube.
She classified herself as a semi-vegetarian, living by the ideology "meat-on-the-side." Her first cookbook was named after her ideology.
She grew up in a big family. She married her husband Evan, a lawyer, in 2010. She was going to name her first daughter Willa, but suffered an unfortunate stillbirth at 40 weeks. She welcomed a daughter named Ivy in 2016.
She competed against eventual champion Damaris Phillips on Food Network Star.
